This is the perfect and simple recipe for those who love oatmeal but want a healthy alternative to the typical sugar filled oatmeal raisin cookies.
I had found a lot of recipes online for oatmeal cookies so I took a few and changed them up a bunch to find something the works for me. I don’t eat processed sugar, only fruit sugars or natural sweeteners like stevia. I also try to keep down on the salt and dairy. So sometimes finding ways to make healthy goodies can be hard.
This recipe can be made gluten-free and sugar-free which is the great thing about it. They are packed with protein and super simple ingredients so, sometimes I bake these during the evening so I have little scones in the morning. They are perfect for a quick breakfast on the go!
What you will need:
1 cup milk
2 cups oats
1 cup flour
1/4 sugar or natural sweetener
1 tablespoon cinnamon
1/2 cup of butter
First, start off by soaking the oats in the milk for about 10 mins so they soak up most of the moisture. Then add all the dry ingredients in a big bowl and mix well together. After that add all the wet ingredients and mix until it resembles cookies dough, of course, the texture might vary from batch to batch but as long as it sticks to itself it should be alright.
Next, you want to butter a baking sheet and scoop out smallish round dollops place them on the baking sheet. Bake at 350F for about 25 mins or until the cookies are slightly golden brown on the top. Let cool, serve up and enjoy!
